From the impossibly juicy heirloom tomatoes that grace our Caprese salads in the summer, to the hearty root vegetables that lend their earthy sweetness to our winter stews, each and every ingredient that graces our plates can be traced back to the rich, fertile soil of this beloved local institution.

But it’s not just about the produce, my friends. Our commitment to showcasing the best of our region extends to every corner of the menu. Take, for example, our selection of artisanal cheeses, each one crafted with love and care by the skilled hands of local dairy farmers. Or our lineup of craft cocktails, featuring spirits distilled mere miles from our doorstep, infused with botanicals foraged from nearby woodlands. Or our ongoing relationship with the Akashi Fishery, where the skilled craftsmen employ centuries-old methods to hand-select, hand-filet, and hand-pack the most pristine, sustainably-sourced seafood.

But even as we pay homage to these culinary legacies, we also wholeheartedly embrace the spirit of innovation that is sweeping through the sustainable food movement. We’re constantly seeking out new and exciting ways to push the boundaries of what’s possible, whether it’s experimenting with cutting-edge fermentation techniques or exploring the vast, untapped potential of underutilized ingredients.
